    My local restaurant supply store sells the clear plastic squeeze bottles for less than a buck each. I think the small ones are close to .75 each. At that price I wouldn't sweat losing one per job. You could sell extra sauce for a few bucks per bottle and include the bottle.

    I'm in the same situation, except I have a WSM and I keep wondering if I should buy a kettle. So far the WSM is winning. My only WSM complaint is that the 18.5" is too small for a full rack of ribs. I trim the end off to make them fit and curve them a bit.

    Do you guys trim any of the fat off, or do you just cook them the way they look in Robert's pictures? I am assuming that small pieces like this would cook for 3-4 hours at low heat (225-250). Higher heat (275-300) would probably cook too fast. I am correct? I measure temp at the vent.
