    I don't mind using the water pan, either with water or just foiled. The problem is that the stock water pan for 18" is just so stinkin' deep, so sometimes I just just foil a mesh pizza pan I have that fits and use that instead.     Nice! The Performer is hard to beat as an all around good grill. You can do (almost) everything with it, slow and fast. I love that you are loving it. My Performer gets used almost every day during the 'grilling season'.

    Well, it looks good. I charred the helper handle on my wok too when I used it over charcoal on my Performer. The charred handle was neutral in terms of added flavor.

    Welcome Ben! That's a great cooker, and a great price on that. The WSM is the best all-around smoker for the money, and I think the 18" is the sweet spot. I absolutely love mine. Can't wait to read about some of your cooks with it, especially with some of your background.

    Our neighborhood grocery store stocks SNF products from time to time. If I see a SNF tri-tip there I will buy it, no questions asked. My family has become tri-tip fans in the last year or so.

    I'm late to the party on this one, but I use my charcoal bin for charcoal, and stuff to light it with (lighter cubes, newspaper). I live in Utah, so the humidity is not really an issue.
