What is everyone planning to cook for Smoke Day 19?

I'm going to use the suggestions Chris sent out in his monthly newsletter email: cotija poppers, pork butt (1st time trying Chris Lilly's rub), flourless peanut butter cookies. I would make the smoked beans, but I'm the only one in my family who would eat them, so they are off the menu!

    Rib-eye Cap Steaks for Dinner

Thank you, sir! I agree with your BBQ vs WSM assessment, although I do still use K-Pro in the WSM occasionally when I don't have anything else on hand. Call it opportunistic laziness. I circled the K-Pro in the upcoming Costco sale flyer/book thing. It's on the list.

    Rib-eye Cap Steaks for Dinner

I was thinking similar things yesterday reading through all the Mother's Day cook threads; seems like ALOT of stuff is coming from Costco.' I have tried the oak before, it's great. I'm currently out and need to get some more. Thanks for the kind words.

    Salmon for the Bride

The salmon looks incredible. I would still eat those potatoes.

    Rib-eye Cap Steaks for Dinner

My dear wife picked out some rib-eye cap steaks at Costco yesterday. I was legally obligated to cook them tonight for dinner. Cooked over Kingsford Pro on the Performer. I usually reverse sear these things, but lost my mind tonight and front seared them, then cooked up indirect to the right temp...

    So many KitchenAid Mixer Models

+1 on Mr. Michaels weighing in, I would certainly consider him an expert for the KA mixers. For what it's worth, my current KA mixer is the Costco bundle special or whatever they call it. It's a 6 quart, lift bowl. Pro model?? I think, which means something, but it's not something I would use...

    T-Bone

What a delicious looking plate! The steak looks great, but what puts it over the top for me is the bread. Nice and crispy, and helps you soak up all that good juice.

    Pork Belly for Dinner

Welp, not trying to pile on, but my family asked to repeat this cook with the remaining piece of pork belly from the freezer. Same marinade, same glaze, cooked until probe tender (about 190F-ish). I used a chunk of hickory this time instead of cherry. Served with steamed broccoli and...

    Pork Belly for Dinner

    Pork Belly for Dinner

That surprises me. That surprises me. Maybe it's time to add one. (y)

    Pork Belly for Dinner

Thanks everyone. As far as fattiness goes, not really fatty, at least this piece. Just beautiful porky deliciousness. This came from a pork belly I bought at Costco and divided into quarters. 2 of the quarters were made into bacon ala Bob Correll. I still have one quarter left in the...

    Pork Belly for Dinner

LOL I freely admit to dipping each piece I cut into the plate juice before eating it.

    Smoked, lard braised butt

Likewise, I will use a word that will pass the standards, GADZOOKS that sure looks good.

    Pork Belly for Dinner

I pulled a section of pork belly out of the freezer a couple of days ago. Marinated it today with some soy sauce, lime juice and little sugar (didn't have honey). The organic Kikoman is my preferred general soy sauce right now. It has a more subtle, fermented, wheaty flavor than regular...

    Beef Back Ribs

About 3.5 hours or so. About 1/2 hour faster than I expected. They probed mostly tender at about 3 hours. Last half hour I glazed twice, and then they were probing like butter.

    Beef Back Ribs

Thank you sir. That's a good tip on the sugar.

    Baby backs

    Beautiful color on those!

    Beef Back Ribs

I picked up some beef back ribs at Costco the other day. Wow, prices have adjusted down to a pretty reasonable level again. This was a 4.8 pound pack for $20 and change. My wife is out of town, so my son and I had these for an early dinner today. I used a supremely lazy rub of Montreal Steak...

    Iberico DeRaza Boneless Pork Collar

That looks fantastic. I'm going to imagine what it tastes like.

Ribs on the Grill in roughly 1 hour

I say just go for it and see what happens. Sounds like others have done it or similar. I may not be far behind you though. When I was browsing through Costco yesterday, prices are back down to a reasonably good place on pork and such. If it weren't for my already full freezer, I would have come...
