    Tyler hit the nail on the head. When I first got my WSM I started experimenting with or without water. I found no difference except for my charcoal lasted longer when I did not use water plus clean up was easier.

    It will last awhile, I would be more concerned with wind. Wind eats thru charcoal. Have you tried a smoke without water?

    I don't have an ATC and unless its windy have no problem maintaining temps. As for your second question I just put some charcoal in lit it up and let it go (never monitored temperatures) and used it the next day.

    I just smoked ribs yesterday and it was kind of windy. As you noted the wind will eat through your charcoal or at least it did mine.

    Made these burgers last nights with onion rings and bacon bbq sauce. They were very delicious and I am sorry I only have the one picture but had to multi task and keep the kids entertained.

    If it does get done early I just keep it nice and foiled and then put it in an ice chest (with no ice of course) it will keep it nice and warm for a few hours.
