    Canceled Sirius XM

I've gotta applaud you. They are a PITA to try to cancel service with. I'm too nice. I had to get my wife to call them.

    For you Kingsford Coal burners

I guess but that was a ridiculous test. It'd be meaningful if he regulated the temp on both. The B&B ran super low compared to the Kingsford the whole time because he made the vent settings equal. The B&B has much larger briquettes. The Kingsford will have more surface area lit. I get the...

    Briskets, Ribs, & Sausage-Oh My!!

    Everything looks fantastic, Kemper!

    Easter Brisket and Sausage

Mostly pecan wood, but there was some oak in there. I'm trying to finish off my woodpile. I'm probably going to go all post oak next time I buy wood which should be soon. The brisket took about 11 hours. I mostly ran around 250 but bumped it up in the stall and up to about 285 after the...

    Easter Brisket and Sausage

I cooked some brisket and sausage for Easter this year. Trimmed Top has a scalp on the fat cap thanks to the meat packers. Seasoned with Franklin rubs. Seasoned. Fired up! Franklin smoker doing work! 4th Slice. With some homemade lockhart style sausage. Some homemade Jalapeno...

    Vexed by the Billows

Your vent settings are what I use for a really low and slow cook with the Billows (150 to 180). I'd open up the top more and see if you run better that way. I find the billows works best when it's not struggling either way. I like the damper but the reason I got it was mostly to be able to do...

Lord Vader: A Star Wars Story (2026)

As a science fiction and fantasy fan I'm blown away by how much stuff is out there compared to what was around when I was a kid. The quality of stuff that I don't even like that much is still head and shoulders above most of what we had. Any of the Star Wars shows or movies would have blown...

Lord Vader: A Star Wars Story (2026)

I think it's a fan made concept trailer. I think it's a cool idea, though. I've got an 8 year old so I see a lot of kids movies in the theater. I did so see the new Dune and really enjoyed it.

Getting a good crust on thick steak

I've seared on cast iron in the house several times when it's raining or I'm being lazy. It will smoke up your house if you are doing it right. You may not have a happy wife. Mine thankfully doesn't mind.

Getting a good crust on thick steak

I have stopped after the 3rd minute before. If I'm worried I'll check it with instant read thermometer. Usually 4 minutes is ok, though, if I let the steak rest before searing. I'd rather have a weaker sear on one side than an overcooked steak.

    Colors

I saw that when Tuffy Stone posted that picture on Twitter. I somehow doubt we see the WSM in different colors, but I'm hopeful. I think they are one-offs for the class but who knows.

Getting a good crust on thick steak

When I sear on the charcoal grill I use the Slow N Sear and the spin grate to do the "Cold Grate Method". I think it's key to get your charcoal at it's absolute peak heat. On the WSK, Try putting the charcoal grate in the high position, or get the charcoal piled up using charcoal baskets or...

For those doing a lot of refurb and other work

I didn't get that across I guess, but the DeWalt is superior. It's a fantastic tool. I loaned it to my wife one time to use as work for something and none of the women in her office could figure out how to work it. I thought that was pretty funny. I should have explained it but it just...

For those doing a lot of refurb and other work

This falls right into my wheelhouse as a copier tech. My main workhorse is the Hitachi db3dl2(It's sold now as Metabo). The only thing with it, is its fast speed is extremely fast. But I've had it for at least 10 years now and I've only had trouble with the rubber grip peeling off. However...

    For you Kingsford Coal burners

I finally got a chance to try out the high heat Kingsford. In this case it was a sous vide steak that I seared off on the Weber kettle. When doing a reverse sear or a sous vide steak you really don't have a lot of time to sear before you are worrying about overcooking the inside. I've tried...

Getting ready to give up on my WSM 18.5"

A gasket would fix the sticking lid. I did the 225 thing for years and I've had some brutally long cooks as a result. At 225 you are just barely above the boiling point of water. During the stall, the meat is contracting and pushing water to the surface which is turn cools down the surface...

    Interesting take

The charcoal access is amazing. It also solves one of the biggest problems with drums which is cleaning them out.

    Replacing gaskets

I did this pretty recently and it seems like most of it came off with razor scraper and just a ton of elbow grease. I went with the self adhesive this go around. We'll see if it holds up as well as the RTV. I must have used some kind of solvent. Might have just been rubbing alcohol.

Is this normal? Middle section wobbly

It might be the bottom section is out of round. That's pretty extreme. I've got mine gasketed these days, but it too several attempt to get the gasket right.
