Where is the Smoke in the WSM, Aint no smoke in them thar Hills.

wow... my WSM is crazy efficient with coal!

If it's raining at least put a beach umbrella over it. If not rain will get in between lid and center section. You're gonna love overnight cooks when you can sleep all night instead of getting up every 2 hours to add charcoal. 12 hour cooks are easy in the WSM you can go even longer if you use a...

From the Home Book of Smoke-Cooking By Jack Sleight and Raymond Hull People with palates of average sensitivity have never been reputed as able to tell the difference between one kind of wood smoke and another. Corncobs, by the way, are as good as most hardwoods. If I were to taste smoked...

Len: Apple Butter does not contain "Butter" or any milk product. (think Peanut butter but with apples) it is basically apples cooked down past the apple sauce stage to where the sugars caramelize turning it a dark brown

    Apple Butter on Pork Ribs?

My DIL gave me a jar of her homemade Apple Butter. I was thinking of using it on pork ribs, applying before cooking L&S on the WSM. I am worried it will burn during cooking. I have 0 experience cooking with Apple Butter and don't want to ruin the meat. I normally just season with salt & pepper...
