Just did my 1 year clean

Have had to use a grill brush and scrape the lid and sides. Also keeps the flakes from falling on the meat. Recently goohey residue has been little of an issue with the lid sticking during a smoke. But heck, my mom told me to never use soap on a cast iron skillet or pan, that is has to cure. My...

    Butts in pans?

Has anyone smoked butts in foil disposable pans? My friends do this, and think it helps the moistness of the meat. I am a tried-blue-believer in the Southern Succor Butt smoke as instructed on this site. I have smoked for 3 years this way, and because of the great taste and success, have not...

    How many butts?

Matthew, I have smoked 6 butts before, I think as long as you can fit them on the smoker, does not matter which position they are on the grill surface. Only problem is, they might fall apart if you do not have them in butcher twine. When I did 6, about three of them were 5 pounders or less, but...

    bbq in charlotte?

Jeff, You must try the "Old Hickory House Restaurant" located on North Tryon Street on Hwy 29 just before the 29/49 split. NASCAR drivers, teams and fans don't miss the chance to go when the are just up the road at Lowes Motor Speedway. In fact, in the late 1980's Richard Petty and crew chief...

    WSM Lid Sticking! Help!

After couple of years, using the WSM I smoked non-stop for 30 hours. The build up on my lid is causing it to stick to the mid cylinder part of the smoker, very difficult to break apart. Even after remaining apart in 30 degree weather for two days, I closed it up and when I tried to take it apart...

    First time smoking

Hey Steven. I have been smoking since 05 and I always use this site to ask questions and get directions. The Renoun Mr Brown is the best it gets as far as my family is concerned with BBQ. THey won't eat pork anywhere, it has to be ours, done on the WSM. Try the Best Ribs In The Universe rub on...

    first butts over brisket

Todd, I usually put two 7 pound butts over a brisket. I have never smoked a brisket as large as you have. But, I always get started around 6PM, put the butts on top grate. Around 8 or 9 I put the brisket in, and maintain 230 or so in the smoker over night. Usually the small brisket is ready at...

    Reheat Prime Rib

I agree with the wet towels wrapped around meet at 50% power. I am not sure that you can reheat and not move it past medium rare and lose the red. I have never been able to maintain that color, and get it warm enough...

    Graduation Party

The WSM full both racks would be what it would take to feed 50. They will like it, so they will eat most all of it!! The sides may be good, but they cant compare to the WSM hickory smoked Q!! Good luck!

    Ribs and meatloaf at once

I did the meatloaf at 1.5 hours, more than that would worry me about drying out too.

    When cooking 4 butts?

When I have done four at one time, I did not rotate grates. I agree with the others, that the least amount of time you have the smoker uncovered, the better. Just flip them, sop them and let 'em smoke! Nothing better! .....David

    WSM on a wooden deck?

Rear deck is 15 feet or so off the ground, but convenient to my back door. I place a metal tray (used to place under automobile engine) with a border of cheap door mats under the WSM. Overnight smokes could be dangerous, am I flirting with disaster? At least I think I would not try wooden lump...

    NU Temp reading HHH?

Mike, I have had trouble with NuTemps. I learned after my third purchase of probes that if you have sumerged them when cleaning previously, moisture will get in there and it is next to impossible to get out. My theory is that the moisture will react to the heat and provide an incorrect...

First post, new WSM, looking for ideas for a novice first smoke

Welcome Jason! Jump on in and try the "Renoun Mr. Brown" butt. It is easy, and if you follow the directions and advice from this site, you can't go wrong. My first Butt couple years ago was as good as the one I did just two weeks ago. Pork butts are very forgiving as Paul said and awesome...
