    Corned Beef

    Another big proponent of AB corned beef. Have used it for the past 3 years and it's fantastic. Used the saltpeter and haven't used it. Just as good without although I prefer to use it. If you have anyone that can't have nitrates don't use the saltpeter though.

    I placed my turkey on the top rack and an aluminum pan on the bottom, didn't have any issues. Great gravy

    WSM Accessories. . .

    I bought a small galvanized steel bucket to rest the ash and spent coals in, I just dump it from the bowl into the bucket, I keep the WSM under cover so the stock cover works for me. The idea of a fireplace poker is a great one though will have to pick one up.

    Eugene I was shooting for an internal temp of 190+ using the maverick probe thermometer and let that dictate the cooking time. Thanks for the encouragement now just have to learn patience and have a list of stuff to do so I'm not staring at the readout all day
