    Where to Buy

It's very difficult to get discounts on the Weber grills because they have fixed minimum prices no matter where you get them. That's why the only cheaper ones are usually demos....I bought a Genesis EP-330 in Smoke Grey from the local appliance store on tax free day a few years ago...the best...

    Using WSM in Freezing Weather

I'm doing ribs right now ~20F...They've been on for 4 hours...as long as I use my inverted bbq tongs to prop the upside down door open about 1/2 inch it stays 225-250...but will burn 3x as much charcoal in this weather....So I will usually take them off and finish them in an aluminum pan in the...

    Temps

Oh yea, I always have all vents wide open...It will snuff out the coals if you close them...or 2 of them. You might notice that all the coals are burning near the open vent but not burning on the closed sides

    Temps

Do you have water in the pan? I find that if the pan is more than 1/3 full it will eat up btu's like crazy. I use to fill it nearly all the way and do ribs...and i would struggle to keep it at 200...Now today is a cold day here but not too cold...When I smoke in the winter and it's 25F outside I...

    19lb bird - 5 hr cook

This is my setup... water pan 1/4 full...bottom rack...2 bricks, foil drip pan, top rack on the bricks and then the bird in a beer can chicken rack (12lb bird here)....If I don't lower the rack it won't fit under the lid...It's an 8x12" pan so there are 3.5" on each long side and 4" on the...

Turkey on 22.5" WSM Temperature Questions

/I have some advice for you...Get a 10" disposable pie pan or a 8"x12" disposable pan..the biggest that will fit across the grates. I fill the water bowl 1/4 of the way with hot water, and then the aluminum pan and then 2 bricks on the outside of the drip pan and i slide the top rack down past...

    19lb bird - 5 hr cook

I know that if i foil the the rack my temps go way down...I actually have 2 levels of foil now so the heat can pass through the middle...probably the same issue. The pan might have trapped the heat below.

    Beer can turkey ?

It's all done and came out great. I can't believe how much grease you get out of one 7lb chicken. I didn't foil it. The 8" pie tin that I foiled was almost filled to the top with chicken fat...There is some red on the meat by the bones but it's probably the marrow squishing out of the bones. It...

Hey, I'm doing my first beer can chicken on the 18.5 wsm right now...I did some cool things to catch the dripping etc. I put my rib rack on the lower rack and then put a pie pan on top of it with a foil skirt/bed to catch the drippings..then i put the giblets and innards in the pan to cook in...

    WSM Placement?

Store it there and when you are cooking move it out a little. You pretty much have to disassemble the whole thing just to fire it up...move the base out when you fill it and then use it there and put it back when done.

    Genesis EP-330 Assembly Hardware question.

I have a new ep-330 that i am currently assembling. At step 11 they have you place the base of the cook box on top of the frame and affix it to the frame with 2 long bolts from the outside that thread to 2 nuts that slip tightly into hex shaped grooves on the inside of the cook box. The nuts...
