    Beef Rib Shortage ?

So I got a hankerin' to try smoking some beef ribs on the WSM only to find out beef ribs are a rare commodity in Anchorage. Went to both food chains, to Costco, and to the local butcher shop. Only the local butcher has any, and they are frozen. Will have to see if they are suitable or just dog...

    Natural Gas vs. Propane.

My father got tired of lugging propane and running short so he converted his gasser to NG. We had a port on the side of the house and a 15' hose with a quick disconnect. It was really quite handy. I've thought about converting my Silver B, but it's nice to be able to wheel it around the yard...

    Redhead for possible restoration

Has to pass, the firebox had a hole in the right rear corner. Massive corrosion.

    Redhead for possible restoration

I figure the burner parts are available. What's the availability of the wood ?

    Redhead for possible restoration

This unit has been rolling around the local craigslist for a bit. I don't need a gas unit, already have a Silver B but I do like the extra table and the wood. Owner claims there are "9 one way 3 the other" on the flavorizer bars and sent a shot showing just three long bars and a bunch of...

Grilled a couple of NY Strips last night with the Western Lump. I have since been informed that Western Lump will be the "preferred" fuel for grilling meats.

    wallmart western lump

Picked some up at the local Wally's last week. Did a test with a couple of top sirloins. It does "spark" quite a bit in the chimney lighting off. That may be of concern depending on wind and fire conditions. We've been at "High" for most the summer. But I digress. I don't think it sparks any...

A Little Knowledge can be a Dangerous Thing

Using information from this site I smoked a brisket flat and two racks of baby backs simultaneously in the 18.5 WSM this weekend. They didn't suck. There's hope yet. Thanks !

Pellets, Chips or Chunks. Which is best in WSM?

I like a good sized "chunk" of smoke wood in the WSM. 2x3x2 inches as an example. Anything smaller and i have to use a pouch or box to contain them and I might even soak in H2O for a bit. Some vendors definition of "chunk' ain't the same as mine. I have some Alder "chunks" that look like chips...

    SouthCentral Alaska

Been a Weber user for years, just doing basic grilling and some smoking with a 22" Kettle and a Genesis Silver. Decided to try my hand at smoking with the 18.5" WSM. Still looking for the perfect combination of brine, smoke, and temp for red salmon. Everyone has their own idea of "perfect". I...
