    Pellets versus wood chunks?

The wsm is not designed to be used with pellets. The only way your can use the pellets is if your have a hopper. If your throw a handfull of pellets on top of the lit charcoal I imagine that it will burn up quickly and it won't give you the long lasting burn. I have never used pellets but...

    Just a Flat

I get my full packers are walmart. They always have two in the display case and some in the back. They tend to have a thick fat cap. I did by one once when it was actually going bad, so keep an eye out.

Dremmel tool, when you replace it make sure to get the one touch system for a performer, I hear they are stainless steel, a little more $ but you won't have to worry about it again.

    Possible problem

Butts got to 190ish at 330am, pulled them and wrapped in saran wrap and double foil and put in the cooler with towels. Just placed 12 bb racks on the smoker and added some more K. Looks like everything is turning out perfect. Going to bed. We'll so how the ribs are in 6 hours.

    Possible problem

I'm cooking two butts, total wieght 16.5 lb. I got them on the smoker at 7:30pm. I was riding 280. I stepped out for an hour with my wife and my temperature spiked, the lid thermometer was reading 350, not bad for high heat but I'm not doing high heat. I think I started the MM method with to...

    Help, Tailgate for 35!

My buddy asked me to bbq some meat for a tailgate we have on Saturday for 35. I'm doing 12 slabs of bb's and 15 lb of butts. He is doing all of the sides, baked beans, cole slaw & mac & cheese. I think this should be enough for 35 people, I'm calculating 4 oz of cooked butt along with 4 bones...

Ideas? What are you grilling this weekend?

I did 3 bb, first time using foil as I was under a time crunch, it was FOTB, not my liking, I will stay away from the foil. I also had a stubborn 5 lb butt that after 6 hours at 325 would not break 174, ended up pullng and chopping up due to time constraints. I will try a HH butt again.

    Pork Butt Brand Names.

Stay safe everyone. A least in Florida I have seen mostly Smithfield. I hav enever had any problems with them. I hear Hormel uses solution, it gives it a hammy taste. I've never seen or used it so I cannot vouch for it.

    Costco ribs?

I like Costco bb ribs. Earlier in the year the three pack was averaging between 9 and 10 lbs, the are now averaging 7-8 lbs but closer to 7. Some have shiners. I like to stick to 3 lb per rack, anything less does not have enough meat. I checked out Sams and they carry Smithfield BB's with no...
