Advice please…..The search in progress for a Performer

Yep, that one would need some cleaning ! And there's the joy in seeing an old Weber regain it's former glory in its new and good home.

Advice please…..The search in progress for a Performer

Nice and you won't have any OPC (Other People's Cooties) to wash/burn off. (I just bought a used One Touch Gold and it has some serious cooties !) :)

Advice please…..The search in progress for a Performer

I'd hold out for a better one. That is the smaller size "2nd generation". There were two table sizes. I like the original "SSP" (stainless steel performer) and the 3rd generation performers best. They seem to be plentiful out here....$50 - $175 Example... Here's a 2nd gen Performer only the...

calling all weber gas go anywhere owners

Hope you get it fixed soon ! We've used those grills up in the Deschutes Canyon where it can get windy. Never had any problems.

    handle screw

Take the stainless steel screw that has threads that fit but the head is too big and chuck it up in a drill motor. Spin it and run a file against it to reduce the OD of the head. Keep the children away. ;)

    Temp Gauge

At the end of the day, the lid therm tells your when it's safe to put the cover back on. Use your Maverick for cooking. Edit: Tel-Tru doesn't make a therm of the proper dimensions that is "graduated" for smoker temps. If you really have to have a lid therm, order a WSM therm from...

Recommended U.S. off the shelf products?

I don't use a lot of prepared rubs and sauces but I like to do Memphis-style loin back ribs and use Killer Hogs "The BBQ Rub" for that. Also.... Stubbs products are very good. Kinder's is a newcomer from Cali and is very good. Personally, I freely hand out demerits for high fructose corn syrup...

    Performer Gold vs. Performer Deluxe

You can always upgrade to the newer bale..... but you are stuck with that awful Taco Handle of the newer model ! Hate the Taco Handle !

How do you light charcoal: Basket vs stacker

Using the baskets on opposite sides in a 22.5"..... Take one sheet of newspaper, split, roped and stuffed/wrapped into the underside of a #7447 chimney Pull 8 briquettes from each basket (opposite ends) Place into the chimney Wet with a splash of rubbing alcohol (Walmart quart squirt bottle)...

    Temp Gauge

I wouldn't worry about the lid therm. Get a Maverick ET-732 (or higher) and move on.

The door gaps are "designed that way" - I had to share this

At the end of the day, a good WSM should be just like a good woodstove....AIRTIGHT ! That way you can control intake and exhaust. Then when need be, SHUT DOWN AIRFLOW COMPLETELY ! I don't see how that is negotiable. And yes, I am shouting occasionally. (I'm a construction guy, we shout a lot)...

    BBQ'ing beef short ribs

Grilled corn in the husks for the win !!! You'll be amazed if you haven't tried it.

Lid hinge placement on a 18.5" WSM

No. Let's say you are right-handed and want to do a Thermapen temp check.... Put your left hand out, as if to grasp... Your grip is PARALLEL to your body. So, you want your hinge to the LEFT of that. That makes your handle 90° to the hinge. In other words.... If the hinge was a long piano...

    BBQ'ing beef short ribs

Lookin' good. Nice "pull-back" goin' on there. Is that an 18 or 22 WSM ?

St. Louis Spares on the WSM.
