Grate cleaning- How clean is clean?

They will never be super-shiny like new once you start cooking on them. I run mostly 300° and lower and my grate still looks very good after two years. It's a flip-up and the middle cooking area is quite clean ("straw" color) and the flip-up areas I leave "smoke-stained" (dark color). I cook...

Grate cleaning- How clean is clean?

Yep, to be expected. And I'm pretty anal about keeping my grates clean... http://tvwbb.com/showthread.php?52121-Soaking-Grates Many will say, "just heat that grate up, brush it and be done with it", but I do low and slow cooking most of the time and the soaking method works best for me. It has...

    One touch gold disassembly

Good tip, Tony. And an easier solution as compared to drilling through the leg sockets. Hopefully this new kettle still has a robust leg-to-socket fit.

    Pecan wood limbs...

Or a chop saw (power miter saw). Works very well to make smokewood wafers. Make sure that the weird shapes are firmly nested against to fence for safe cutting !

    One touch gold disassembly

It's a new kettle apparently assembled by Team Dementia. Hopefully it does not not need "helper screws" through the leg sockets already ! Probably a 50-50 chance that the triangle is upside down as well. The good news is that some of these Team Dementia assembled kettles do not have the legs...

    One touch gold disassembly

You'll want to remove the wheels and just start over with the assembly. Some might try to leave the under carriage assembled and rotate it, but I would start over and deal with each leg separately. To remove the wheels you need to deal with "push nuts"....Weber calls the "hubcaps". I like to use...

    Excuse my ignorance, however....

Garden gnomes like to take saunas under the WSM and found it to be too hot. The heat shield was added to modulate the heat. Got to keep your garden gnomes happy or you will wake up to tipped over kettles. ;)

Recommended U.S. off the shelf products?

Just received some Blues Hog Original today. After tasting it, I see why some of the pros are rumored to use it in doctored form. It's fantastic sauce although it has HFCS.

    Ribs in foil

That's how I roll. Never did like the foil drama. Remember, with Memphis Style you can always sauce at the end of the cook (and wrap for that matter) for the sauce lovers in the crowd. Follow this and it's a homerun every time... https://www.youtube.com/watch?v=WKvjQFa0GUo

Stubb's charcoal at Lowes $6 for 14 lb bag

As I think it through, it may be more of a better "power rating" as well. I will have more unburned briqs in my baskets after a cook with Stubbs as compared to KBB. Stubbs is of higher quality, you just have to decide if it's worth the extra cost.

1955 Weber Bros Metal Works department store demo

Look at that. An early stacker ! And wow, those outfits ! No wonder the Soviets feared us.

    Trade 2010 for 2016 performer?

You actually have the best Performer ever made there. Just need to swap some parts around and then sell off the runt ! You know which parts. ;)

    More room for ash 14.5

That's a great mod ! Also a low ash briquette like Stubbs would be benefit in the 14.5 and the mini.

Stubb's charcoal at Lowes $6 for 14 lb bag

One thing I've noticed in regards to the Stubbs low ash characteristic.... I use the Weber charcoal baskets a lot. Whenever I use KBB in them I must clean them out after each cook. With Stubbs I can go 2 or 3 cooks without addressing ash buildup. Just a little in place shake maybe.

Marinade for Flanken Ribs NW Style

I thought that I would move this back up because it has a unique flavor and it's easy. I spent the good part of a summer "cracking the code" on this secret local marinade. If you're not familiar with Flanken Cut Beef Ribs, they are simply sliced from the beef short rib section. Any butcher can...

    Inexpensive temp controller

I have one and it does work. I would advise not over-thinking it and set it at 3 or 4 on the dial once you are near target temp. Then fine tune it to target temp and your conditions. A typical set-up for me... My bottom damper(s) are probably 1/8 open, the TTT is open about 1/8"-3/16" open and...

    Men who can't grill?

Stunted the proper and on schedule development of their mental furniture. I must admit, when I was a boy I did the Starter Fluid Volcano as well. Ignorance is bliss.

    Men who can't grill?

I see a charred piece of something in those tongs. Looks like the rest of them are going to pour the contents of their bottles onto the fire to put it out ? ;)
