    If you go to the operating tips on the main page Chris has an article about the grate temperature. Cooler at the lid than the top grate.

    That makes sense to me about the vents. But also the amount of wood is probably causing the over smoke taste would be my guess. Because so little would is needed most of the time to get a good smoke flavor.

    I also think moisture in the cooker is important along with many others before me. At least on brisket and pork butt but not chicken and ribs.

    18.5 vs. 22.5 I know its an old question but

    The 18 is your ticket,the 22 is way to big for your crowds. And I feel quite a bit more expensive to operate. So I agree with the other. Have fun!
