I'm new at this whole smoking but gave ribs a try last weekend as my maiden voyage I was thinging about doing up a few dozen chichen thighs this weekend. I was even thinking of doing some more STL ribs on the top rack of my WSM and the thighs on the bottome rack so the juices of the ribs drip on...

Well we are closer to the nuke plant in Seabrook. Plus after a few JWs it doesn't seem to feel as cold. Not sure why...... I was going to do another try this weekend but its going to be in the 20s with 20-30mph winds soooo maybe not. Not sure there's enough JW that can make that feel warm.

Can't help you on the brisket problem to much of a newbie but I'm from Mass also and have a question. What does RD stand for?? Sounds like you get your meat there and if its in my area wouldn't mind checking it out. Thanks

I hear ya I just didn't want my 1st smoke done when it was single digits out there. After a little experience and familiarity with the smoker I'll start doing cold weather smokes........ Maybe.......brrrrrr........can use it as an excuse so I can go out and smoke a cigar.....

So this is it finally the weather has warmed to the 40's for the weekend and I get to break in my brand spanking new 22.5" WSM that Santa brought me AND my 1st ever smoke. I've grilled a ton of bbr's but never smoked anything. So I decided on ribs, not just any rib but St. Louie's ribs. So there...
