    That sounds awesome! I'm going to VA beach later in the year and I saw they have a fishing charter for mahi mahi. Only thing is you have to go about 75 miles off the coast and it's a 12 hour charter! Hopefully I can just buy some fresh from a market nearby.

    I actually made this a while ago, but I think it was just coated with a little olive oil, salt, and pepper. I'm making it tonight so I may try a cajun seasoning for a little more kick. I think it'll go with the sweetness of the salsa real well.
