    suckling pigs

I'm hooked on the idea of doing a pig too. I have the 18" WSM, so I'd probably be building a cinder block pit whenever I end up doing it. For anyone who is interested, there is a farm here in the Phoenix area that will ship you whole hogs/sucking pigs that are cleaned and ready to cook. They...

    How to rehab CI skillets?

Today I finally got around to working on this. Thanks again for all of your suggestions. I ended up burning charcoal in all four of them for about two hours. Any grease was long gone by then, and it was just rust remaining. I scraped a good part of the rust loose with a putty knife, then...

    Chicken, Ham and Sausage Gumbo

Even in Arizona it is always gumbo season. It got close to 110 degrees today, but that didn't deter me. Ingredients: 3 quarts chicken stock 1 lb smoked sausage 1/2 lb ham 1 cup each onion, celery, bell pepper Garlic Cayenne pepper Salt Ground pepper 3-4 cups cooked white rice Chopped green...

    How to rehab CI skillets?

At my in-laws over the weekend, I was flipping burgers on a big gas grill. I opened the storage cabinet beneath it and found four Lodge cast iron skillets that were slightly rusty, dirty, and obviously hadn't been used in a few years. Two of them also have collected grease drippings from the...

    Cast Iron Pizza Pan

Thanks for sharing your experience Shaun. It's the next best thing to sharing that pizza you showed us! I'll be getting one of these pizza pans.

    Cast Iron Pizza Pan

I'm interested in doing some pizza on a WSM, but am honestly a cheapskate. I haven't bought a stone, grate extender, etc. I was looking on Amazon and saw this: http://www.amazon.com/s/ref=nb...on+14-inch+pizza+pan Has anyone used one of these? From the measurements, it looks like it would...

    Preffered Smokewood For Brisket ?

I've done briskets separately with hickory, apple and pecan. I definitely prefer the pecan. Not sure where you live in Arizona, but pecan wood is pretty easy to get for free. I'm in Chandler and there are a few small pecan groves within a couple miles of me. Just knocked on a door one day...

Big Earl's BBQ - Scottsdale, AZ

Sorry you had that experience....I'd heard Big Earl's was ok, but from someone who thinks Famous Dave's is fine bbq. I haven't been to any bbq restaurants in the area, I can't bring myself to pay a lofty price for something I can probably make better at home. However....the Mexican food in the...

    Gumbo w/pics

Only when it gets cold? It's always time for gumbo if it's good gumbo! I couldn't agree more. I cook chicken/ham/sausage gumbo at least once a month, and I live in Phoenix. Just as good when it is 110 outside as when its 40 degrees!

    Chicken quarters - suggestion please!

I have a bag of chicken quarters to cook this weekend. Want to do something fairly hands-off, since on a WSM it is difficult to cook something like roadside chicken on both grates. Any suggestions??? Thanks!

    Mexican style rice.

My mom was born and raised in Mexico, and learned to cook from her aunts and mother. This is how she taught me to make Mexican rice. It's nothing fancy, but since it is the flavor I grew up with, it's what I like. I use an old iron pot (actually mom's old rice pot that she gave to me). Add 1...

Happy Holidays To All - What's Your WSM Doing On New Year's Day?

Picked up a 13 lb. brisket (USDA Choice for $1.88/lb!) earlier today. Going to cook it over high heat for dinner tomorrow. Ironically, many parts of the country will have a warmer New Years Day than Phoenix. Enjoy!

    Christmas

Kids are asking for a turkey, so I'll be smoking one. I saw some nice rib roasts at the store today ($3.47/lb for the large end!), but they really aren't into bloody beef. The part I'm really excited about is the tamales I'll be making on Sunday and Monday this week. Exactly how Mom taught me...

    Grilled Stuffed Pork Loin

I caught pork loin on sale this week, so I had to figure out what to do with it. I'd never grilled one before today. I followed this recipe and absolutely loved it! Thanks for the recipe Paul.

BBQ joints in Southern IL and also St Louis area

I'm a year late to this thread....I lived in southern IL for 4 years (Mt. Vernon, 70 miles east of STL). 17th St. is a must if you want to try some good ribs. The pulled pork is average but not outstanding. Make sure to get the beans and potato salad too, both are very good. The three...

    Meat prices

I usually get butts and loin back ribs from Fry's (Kroger). Butts are $1.99/lb but often go on sale for as low as $1.09/lb and are pretty goot. I like their ribs, buy them when on sale for $1.99/lb. Bought some loin backs at Costco the other day for $3.29/lb. Great quality and the membranes...

    Costco has Packers!

I was at my local Costco last night, no packers there. Only the trimmed flats. However.....they did have tri-tip, two to a package, for $3.99/lb. I let the kids choose so we left with some loin back ribs, but that's the cheapest I've ever seen tri-tip locally.
