    I love hickory with any pork. I agree with fruitwood and poultry. I am starting to mix and match to fine tune flavor. Most recently turkey with apple wood and a hint of hickory. It turned out very well. I used six chunks and will go four next time. Not bad this time, but not perfect either.

    I have returned to this post because I smoked a turkey today with an empty pan, no clay saucer and it worked out great. I still plan on grabbing a saucer and trying it out, but it is nice to know that I do not NEED to. I will still use water in the pan for butts and brisket.

    Yes, small but tasty! It turned out great. I just need to figure out how to post the photo of the finished bird. My experience with smoking up to now has included water in the pan, this was my first dry smoke. No sand. No clay saucer. I was a little nervous, but the WSM came thru with no trouble.

    What's the best brining vessel for a turkey?

    I had been tempted to go the Alton Brown route and grab one of those round yellow and red Igloo coolers, but I am serious about not having extra space around the house. Those XL Ziplocks really spoke to me with an ice bath in my cooler. Great tip about the air drying in the fridge! Thanks.
