Brisket Size

So I bought 2 cryovac'd briskets from Costco for this weekend and am a little concerned about the weight. Each one is just a bit over 4 Lbs. From what I've read here they should be 8 to 12 lbs. I've never done brisket before. Any comments on the weight?

I'm planning to do the low and slow on my 22 WSM with these. Would I still target that 185° - 195° range (probe tender)? As far as timing (at 225-250 F) am I still looking at 1½-2 hours per pound?

Lastly, I'm going to smoke a Porchetta as well that has a Chimichurri rub/sauce applied. What would be better, Pork on top - Brisket on bottom or vice versa.
 
The brisket has two parts, the point and the flat. It sounds like you got one or the other at Costco. It should say on the label. Either way, you probably are right on with the timing...but just monitor temp of the meat, because it's done when it's done.
 
James - the label says Beef Brisket Vacuum Packed. Costco also sells just flats. They seemed to know what I was talking about when I asked for a "whole brisket". They pointed out they have flats and the full vacuum packed. Thanks for the reply!
 
I buy whole briskets at Sams club, and they are 12-15 lbs. Maybe Costco does something else?

Regardless, it sounds like you have the right plan...1 1/2 hr/lb.

My experience with brisket has been that it is difficult to find it whole. I am not a Sam's member so maybe those guys have the upper hand. Still with the 22 you can just buy 2 or 3 to get the weight that you need. No problem. As stated before done is in the temperature. I hope it turned out great for you!
 
Walmart carries whole packers. Got a 16 pounder there the other nigh.t
