    Deciding between 14.5 and 18.5

That may depend upon where you are, so I would check that out. Here in Tucson, the use of bbq's is governed by Tucson's Fire Code and has nothing to due with the availability of power supplies and everything to do with the combustibility of the structure. Many newer condos out here have...

    Tiny Grassfed Brisket Cook

Oh, I didn't measure the temps once I put it in foil. I just used the thermometer as a probe. The actual temp when I took it off was around 220*, but I just ignored that. The edges did crumble off when I sliced it, but the knife was pretty sharp. It was very tasty.

    Tiny Grassfed Brisket Cook

So it turns out that the local university has a Meat Science Lab. On Fridays, and only on Fridays, the general public can go down and buy whatever they have butchered recently. Having never been down there, last week I went and checked it out. They offer both corn- and grass- fed beef, pork...

    Hello from Knoxville!

Welcome. My wife grew up in Knoxville. I'm not sure of which high school she went to, maybe West? Anyway we went back there for her 10 year reunion about 15 years ago. Beautiful country. We were there in the summer, so it was a little humid, but other than that, it was very nice. She did 3...

So I know nothing about automatic temperature controls - why isn't there a sticky?

Like it says in the title, I don't know anything about these things. I was more curious about why there isn't a summary of information about them. So many of the posts seem to be either packed with too much specialize information, or simply say buy a Guru (whatever that is), the company is...

    Wrapping beef ribs?

I've never wrapped them before. I've made them about 4 times and not had an issue. However, I don't really care for wrapped pork ribs. I typically smoke them 5-6 hours. Good luck. Here is a shot of unwrapped ribs that I did a few years ago.

    Welding Blanket Question

I don't use flickr, so I don't really know if it gives you an image address to copy. However, I did poke around and get: The code is [img]https://farm6.staticflickr.com/5550/12374807163_c8a0c6b6fb_h.jpg[\img] the backslash \ should be replaced with the forward slash / I believe that you can...

Buying a whole chicken & cutting up vs. chicken parts...which is cheapest?

Growing up, I didn't even know you could buy parts. My mom always bought whole chickens and cut them up. The way that she did it, the backbone was always cut in half, one half had the tail and the other didn't. I don't know why, but the prized pieces were always the upper backbone and the...

Chuck eyes on a Friday night

Looks really good. I wish I like brussel sprouts. They are so bitter to me. I always wonder if it is me or that is how they taste to everyone and I a wimp. My wife loves brussel sprouts. I wouldn't mind a nice steak right now. Looks so yummy.

    Knife Suggestions

That was the one that I was looking for, when the guy turned my on to the Mercer. I decided to buy local. I like the shape and feel. I really like the handle/grip. I haven't had it long enough to evaluate edge retention. It seems no one stock victornox locally. I usually try to find a...

    Knife Suggestions

I recently stopped in restaurant supply shop. I got an 8" chef's knife for $18. I like it. It definitely isn't a forged knife, but i don't get hung up on stuff like that. The brand name was Mercer

    Stuffed Chuck Roast

I put this in the Throwdown thread, but not enough accolades  Never done this before, but I thought I would take a stab at it. Fry's (Kroger's) just happened to have Choice Chuck Roasts on sale, so I picked one up. I haven't done too much with a chuck roast before and was thinking...

Chicken Galatine Ballotine... thank you Jacques Pépin!

I can see the youtube video, but none of the pictures. However, I used that video to do a chicken and a turkey for thanksgiving 2012. It turned out very well. I'm sure it is lovely. And now I can see the pictures. Go Figure. It does look quite scrumpcious.

Need some Direction - Brisket and/or Apps

I would just do a brisket, the whole packer. Of course, I am a jump in feet first kind of guy. I think that I did overnight brisket as my 3rd cook. Well, and pulled pork, too. I think that it is pretty hard to mess up the whole brisket. I mean I have burnt the bottom when I tried the high...
