    Using second grate for first time

    Have had my WSM for almost a year. Used my lower one for the first time a few weeks ago. Had large order for pulled pork. Did 5 butts. Now I have used it 3 or 4 times more.

    Important note: Clean your drip pan before doing high-temp cooks!!!!

    I take it a step further, and place a foil pan on top of the foiled water/flower pot base assembly. Pull it out, and throw away.
