Using second grate for first time

I'd gotten an eye of round roast to smoke for the game saturday night(GO PANTHERS!!). However,as usual our playoff party has gotten bigger than planned,so I pulled a butt out of the freezer. So,I get to get up tomorrow in the early am and put the butt on. The Phil-be-cue went so well last week,it was requested again! Once again, GO PANTHERS!!

Have had my WSM for almost a year. Used my lower one for the first time a few weeks ago. Had large order for pulled pork. Did 5 butts. Now I have used it 3 or 4 times more.

Good luck with the cook Phil. It's a late game, so you shouldn't have trouble getting things done in time. I continue to be amazed at the success the Panthers are having. An easy game against Arizona, but next week will be a tough one either way. I'll be pulling for your team and the Eagles.

Bryan, the WSM has always cooked more than enough food with just the top grate. We just had some late additions to the get together tonight,so I put the butt for Phil-b-cue on the lower grate about 45 minutes ago. I'll put the loin roast on about 2:30 this afternoon. And GO PANTHERS!!(and Eagles!!!)

Poor Panthers got their eye's plucked out by them pesky Cardinals! Would you get a bigger smoke ring if you were to use an extended rack so your food is up higher in the smoke?

I don't think so. I cook briskets on both racks at the same time and don't see an appreciable difference due to rack placement.

maybe, if smoke was what actually produces a smoke ring, but that's not exactly the case. The biggest difference maker, IMO, is fuel. For some reason my ring is much deeper when I use briquettes instead of lump.
