    Cold Smoking Accessory

I've only used pellets and have struggled with the 5x8. I have a heck of a time getting the pellets started and keeping the pellets going. The instructions say: Set your MAZE on a level surface or grate. With a propane torch on low, light the pellets through the starter hole for 45 seconds. A...

What's on your grilling and smoking menu for the Fourth of July Weekend?

I was just looking over the selection of Prime Briskets at Costco yesterday (Rochester MN). They had 2. TWO. Both at 10 1/2 pounds. And at $4.99/lb. Ugh, I had to pass. They also had 10-12 flats that were either $7.99-$8.99? Again, pass. Good luck.

Need a little help with a pork butt

My 20 year old daughter, who is out living her best life as an adult, asked me point blank the other day: "Do you have any of those bags of pork left in your freezer? We're out, and really want some more". Of course I do. When you fire up the 22" WSM, you don't just do 1 butt, you smoke as many...

    Beef Wholesale Prices

Saw a reference to a 40% jump in wholesale costs in a forum post earlier today, and it reminded me of this: the "Beef, It's What's for Dinner" Wholesale Price Update. I've seen this several times as I've researched cuts of meats. I really don't have any need for the info, I just found it...

    18" WSM and rib racks

That's like me trying to convince the wife that an investment in a 14" WSM would be a good idea for our family. She tends to look at the 18" and the 22" that are regularly used and ask, "Why?"

    Rib candy

Question: is it safe to assume that this product is just a thinner version of a pepper jelly that I may or may not have made at home this past year? (I probably won't attempt this at home because pepper jelly made with ghost peppers from my garden might overwhelm the meat/smoke flavor)

    Wood chips in WSM

I almost exclusively use the Minion or Snake method in my WSM, and I'm not shy about tossing a few wood chips on the unburned charcoal. It won't burn/smolder until the heat gets there, and it allows me to extend the 'smoke' time. I also have an A-MAZ-IN smoker tray for use with pellets, but...

    Brisket better than pork shoulder?

Assuming that you don't object, I'm going to steal that for myself (and use it elsewhere!)

Is there a trick to adding lit charcoal to the WSM?

I've used the door as a chute to get fresh charcoal in - very much the lazy man's way - and it works fine. It's a cheat version of this.

What do you do with the leftover lit coals in your smoker?

After I cook, I shut all the vents down and let it die by suffocation. Once it is 100% out (I usually wait until the next day), I preload my chimney starter. Hint: put several NEW, UNBURNED briquets at the bottom of the starter before you start piling on the used stuff from the bottom of the...

    New here need advice.

You are in the right place! I see from your profile that you are from Michigan. I'd be that out of the THOUSANDS of members here, someone lives close by. Your best bet may be reaching out and trying to find someone local, arrange a meet-up, and check out one for yourself!

    NOT a coincidence

I've heard/read that your device isn't necessarily listening to you (I have a hard time believing that sometimes), but that network traffic monitored from a single wifi point will then push back ads to everyone that uses that WiFi access. For example, my wife was looking for "XYZ" on her phone...

Help on how to Pre Cook Spare ribs to freeze and reheat later.

I thought about this, but I thought I'd err on the side of caution. The FoodSaver website says: Can I boil FoodSaver® bags? FoodSaver® Bags and FoodSaver® rolls are simmer safe for sous vide cooking. Simmering is a food preparation technique in which foods are cooked in hot liquids kept just...

Help on how to Pre Cook Spare ribs to freeze and reheat later.

I did 8 racks of St. Louis cut last weekend, and put the FoodSaver vacuum sealer through a workout. Because of how I reheat my ribs (more on that), I cut them down into 4 bone sections and used FoodSaver quart-sized pre-made bags. This made good use of the box of the bag assortment I had bought...

Post a picture of your pets.

Took this very good boy camping last year. He behaved better than anyone could have asked, and was a joy to hang with around the campfire. My main concern was that he wouldn't react well to tent camping - but my fears were soon dismissed!

    Grill Shelter Query

Love this, but 100% see myself having to clear out 20-30 wasp nests per year out of this if it were in my back yard!

Great. Now when the Mrs. wants to go antiquing, I'm going to volunteer to come along to see if I can run across one of these!

    The Humor Thread

What now? Drive on the ice? (Southern MN, a few weeks ago). There's 18 inches of crystal clear ice underneath me. My vehicle was by far the smallest one on the ice that day.
