    I usually run my 18" WSM between 275-300 when doing butts. If it gets done early stick in a cooler and let it rest. I have let a butt rest for over three hours before pulling and it was still hot.

    If You Could Only Have One Weber?

    22" Kettle. It can do anything any other Weber can do. I have smoked ribs, pork butts, turkey and salmon on it. Hunsaker griddle plate turns in into a great griddle. My Kettle Pizza kit makes great pizzas. Low and slow or high heat it does everything.

    I have a Big Green Egg pizza stone and have used it for ten years with my Kettle Pizza attachment. Still going strong. Expensive but it lasts.

    No. When I reheat I thaw it out and get a stock pot of water just to a boil and turn off the heat. Drop the bag with pork in it and let it sit in the hot water for about 10 minutes. Just as good as the day it was smoked.

    I have the same stone and no issues. I mostly use it inside to do pizzas. For the kettle I have had a BGE stone for about 10 years.

    What’s your biggest or most memorable barbecuing oops?

    Picked up a couple of prime ribeyes from a local butcher. Fired up the Genesis and had the steaks on the side table and went inside for a few minutes. Problem is the dog was outside and had herself a great dinner before I got to grill the steaks.
