    Saturday night T-bone

    Couple of T-bones that have been in the freezer since Christmas. Twice cooked spuds, bell peppers, carrots and shallots. Used some "restaurant grade" lumpwood which burns very clean and very hot. These steaks were a bit thin so just a quick sear needed. Need to get some bigger plates.

    Thanks all. I used three little pigs rub on the ribs, then Stubbs sweet and sticky sauce. I found them a bit salty but I hadn't realised three little pigs is mostly salt and I put quite a lot on!

    Giving this a try for Xmas turkey. Mixed up the ingredients and warmed it up to make sure everything is mixed. Will let it cool then chill in the fridge next to the 9lb turkey. Then introduce the bird to the brine at 10 am tomorrow (Friday).

    I have been trying to persuade my better half to try a rotisserie duck. That's a great rub suggestion from Chucko. Even without a roti I reckon a slowly rendered duck on the kettle, indirectly roasted would be great.
