    Having stayed with a family in North Africa during the 1970s, I do know that the meat can be greasy if prepared improperly. Otherwise it tastes great either in a couscous or curry when prepared properly.

    For the past several runs I've smoked bacon at approx 150-175F for around 4-5 hours to no avail. Maybe I need to run the WSM at full throttle, at 235-250F.

    The glow in the dark thermometer was installed in my 18" WSM in 2007 and has worked well. When not in use the WSM was stored indoors yet now there is condensation on the interior side of the lens of the thermometer. How do I chase away that condensation????
