    Rick, If you do the Water Pan Modification and you are only cooking a couple of butts, you can sleep 7 hours easy. Set the temp at 240, keep the vents at 1/3rd open and you are good. However... The more meat in the cooker, the more attention that you have to pay attention to the cooker...

    Use pork butt for homemade sausage?

    it is the perfect cut for sausage. For most sausages you want a 80% meat to 20% fat mixture, pork butt is right around that very mixture. Besides being a good cut for sausage, you can get it very cheap if you hunt around for a deal. I have sausage out of butts for years.

    It is realatively easy to get 12 trimmed racks of spare ribs (actually 24 half racks) into a WSM with a basic rib rack.
