Flat Iron Steak and My Attempt to Copy Publix's Mardi Gras Wings

I like how you go from a little chimney to a finished product ;)

If you had $100 to spend at the meat market, what would you buy?

I realized this is skirting around the answer, but I'd treat myself to a nice expensive meat that I wouldn't normally consider.

    Summit 620 vs 670

I do not own a Summit grill, so I can not speak from experience. However, I don't think an infrared sear burner is worth $600 as it seems that it's the only feature you're interested in. It may assist in cooking, but I guarantee your guests won't be able to tell if your rotisserie was cooked...

    Brining pork chop

What about brining the chops after you get to the camp site? All you'd need is water, ice, and whatever spices and seasonings you plan on brining with. All of these ingredients are camping essentials, so there's no reason that you won't have them available to you.

Just Saw This Come Through On Reuters

    Char-Baskets?

I cooked for my first time on my performer yesterday and I DID use the char baskets. I positioned them in the centre of the grill for cooking burgers direct. The worked well except for when I put the cheese on indirect and it ran all over the side of the grill (see my other thread). My only...
