SFA - Ya'll gotta see this!

I have really enjoyed this site for some time now... I think CUD is probably one of my favorite videos... Though I live here in Texas, born in the swamps in Louisiana, I have to say that I spent half my life in Miss... Man there is some of the best little eating joints in the world...

    thighs

Ha! It is so funny that you are mentioning this tonight about the skin and the thighs... Think I must be going nuts! Normally I do up a spatch, but tonight I wound up with chicken parts... I say chicken parts, because I used to grill up nice chicken pieces. The store actually had no whole...

    Another Spatched Chicken

Ah! Mid cook myself on a spatch... Didn't marinate, but it will be swimming in some homemade white sauce soon enough! Post pics!

    Possible indirect setup?

Ok Rich, you have had ample time to try this method out! How is it working for you?

    Possible indirect setup?

The last coule of pizzas I have done, I ended up putting the pan on top of my rib rack. This gets them closer to the dome. The top is then done quicker, and the bottom is done slower </div></BLOCKQUOTE> I have done an iteration of this setup as well, except I used the WSM ring again and just...

    Possible indirect setup?

I LOVE the pizzas this way... Keeping in mind, I am certainly no pizza chief, but I was always under the impression that the pizza oven "had" to be a gillion degrees... All I know in my little mind is that my pizzas are working great for me with this method. Like Rich, I can see a use for this...

    Possible indirect setup?

Ah! I knew I had a pic or two of this laying around... Insert your Performer here! Actually, this might work pretty well for you... I believe my airflow issues are really the fault of the pizza stone. You can still reach some pretty high temps with this setup, although I was not hitting my 550...

    Possible indirect setup?

This works fairly well. I have done this several times. Actually, this is how I cook my pizzas. WSM charcoal ring in the performer, coals around the outside of the ring, pizza stone in the center on the grate. The ring fits perfectly under the grate. I will say that I have not been able to...

    Another grilling video...

Ah! It is so sad... I ALWAYS take one of his little doggie treat sticks and put it on the grill for just a minute and pretend that I am cooking it and then give it to him. I'll bet that is what he was waiting on... I completely forgot to do it this cook... Poor guy!

    Grease spots on Performer deck...

Great suggestions fellas... Just so happens that I have a ton of Barkeepers Friend, Star San and such... Might try that. Think my biggest fault is that the Performer lives out in the Texas sun, and I have not been too diligent with my cleaning. The stains go so deep. I'll give these things a...
