    Hatch chiles!!!

I don't know what this "juice" is. There isn't any in the Anaheim/"Hatch" chile. If you've ever had a pepper burst on the grill, and been sprayed with hot seeds, you'll never forget to poke them first. Source: http://www.fiery-foods.com/dave/fresh_chiles.asp Some of the peppers I put up...

    Hatch chiles!!!

I roast them on a hot propane grill. Give each pepper a poke with a fork or knife first, so they don't explode. Roast just enough to blister the skin. Don't overdo it - if you blacken/char them, you start to cook the pepper flesh and the skin is much harder to remove. Take them off the...

    Weber 9890 rotisserie

Not sure I see the point of upgrading a grill which is the bottom end of Weber's line. Only two burners and smaller than the rest. With as much time as you appear to spend on Craigslist, why not pick up a 3-burner Genesis or maybe even a Summit? Then you'd have something. edited to add: Well...

    Old weber

3 burners, 13 bars, wood shelves, no flame check, bottom tray is wood. I've replaced the manifold connection when I bought a new regulator as I mentioned on another thread, and I think the sideburner has a closed bottom. The only owner's manual I was given is a small plastic 3-ring binder (on...

    Boston Butt recipes

Thanks for the reply. I'm a gas grill person - I had an old Charbroil until recently, and I use a Genesis now. The butts I've done have been done at medium indirect (on the Genesis, the lid thermometer reads 300 to 325). All of them (sizes from about 4 lbs to about 9) were nowhere near done...

    Boston Butt recipes

My question is about making pulled pork on the grill. I have yet to find a cookbook recipe (including yours in "Real Grilling") that gives an accurate estimate of the time involved. On an old discussion here, I wrote the following: Many BBQ related sites get questions from first-timers...

Also bumping this old thread since Joe Osborn has returned... Joe, if you can answer the question I asked in September I would be grateful.

    Dirt Cheap Genesis on ebay.

Since it looks like Joe has returned, I'm bumping this to get his attention.

    Super Sunday Rub

Your chili powder was a commercial mix, or was it just ground peppers (which I guess would be called "chile powder)? Many recipes use "chili powder" (a mix of various peppers, garlic, onion, etc), and then more of those same ingredients. Always makes me wonder.

    My pork butt video

Why does the first butt appear almost an ash gray in the "Been cookin' 12 hours" picture?

What's the difference between a Genesis Silver B platinum and regular?

Other differences are accent-colored hood end caps, control knobs, igniter button, wheel inserts, control panel, side and rear panels. Work surfaces have stainless steel inserts. All are cosmetic items, nothing I'd pay extra to have.

What's the difference between a Genesis Silver B platinum and regular?

I think the second picture is a "select retailer" Silver A or B. (can't tell whether it's got 2 or 3 burners.) Another of the "select retailer" upgrades is the addition of a swing-up table on the right side. (edited to add: As Jason notes below, it's a silver B - for some reason, the "select"...

What's the difference between a Genesis Silver B platinum and regular?

weber.com has good information. But here is a summary: There are three "trim" levels: Silver, Gold and Platinum. And for each, there's a B and C model - C has a side burner, B does not. (There's also a Silver A - the only "A" model - which is a 2-burner grill. All the others are 3 burner.)...

    Red Weber

I bought a black Genesis 3 (wide cart, with side burner) last month for $50. The previous owner guessed that it was 15 years old, and had recently put in at least $150 in parts (PCI grates, flavor bars, cover)... but after building a bbq island, the Weber was just taking up space, and he was...
