    Excellent Grill Cover

A month ago I purchased a Classic Accessories Veranda cover for my new Genesis 330. I got the large (64 inches), and it fits over the Genesis perfectly. It keeps the grill dry in torrential rain and winds. I ordered it from Amazon, and I highly recommend it. JP

How Do You Clean Your WSM and/or Gasser?

Made some bodacious chicken hindquarters tonight on my new Genesis EP-330 tonight. It's really a terrific grill! Now that I've cooked on it a few times, I'm wondering how you guys clean your gasser? Nothing prissy, but I'd like to keep it clean enough. thanks, JP

1st-Baby Back Ribs on WSM (Pic-Heavy)

Great looking ribs, Stephen. I did my 1st cook on my 18.5 WSM yesterday, a slab of spare ribs, a slab of baby backs, and 2 fatties. Used a different Simply Marvelous rub on each. They all came out perfectly delicious. JP

Years ago I read that the best fries are cooked in beef tallow. JP

Prepping for 2 Shake Down Cruises

The cover (Classic Accessories Veranda) is excellent. I got the large (64") size and it fits perfectly over the Genesis EP-330. It's much better quality than the Weber covers. Last night we had 55-60 mph wind gusts and, although I didn't have any of the straps clipped on, the cover stayed in...

Prepping for 2 Shake Down Cruises

Hello Ray, No snow here in Black Mountain. It sleeted a little last night, but mostly rained. Tomorrow we're gonna see some temps in the 60's. I love this place! JP

Prepping for 2 Shake Down Cruises

I gotta pick up the grill cover at the post office in the morning. The grill is supposed to be delivered in the late afternoon. I'll let you know how it is. JP

    Bacon Wrapped Beef Tenderloin

Sounds like a terrific dinner, Robert! You're right about the price of beef. You almost gotta take out a mortgage to buy a decent rib roast these days. JP

Prepping for 2 Shake Down Cruises

Today I'm clearing out the leaves in my backyard, where my new WSM and Genesis grill are going to set. Tomorrow afternoon those cookers will be delivered, fully assembled with 2 full propane tanks. Got a big bag of Kingsford blue in the shed. My new thermapen, tongs, grill gloves, grill brush...

Tips on seasoning a brand new Genesis EP-330?

OK, I guess I'll just wash the innards a bit with mild soap/water. Get it dry. Then crank it up with all burners on deck for 20 minutes.

Tips on seasoning a brand new Genesis EP-330?

It's me again. My new Genesis EP-330 is being delivered (assembled) on Friday. Do you have any good tips on seasoning it? I've read what Meathead says, but I want to know your ideas too. I've already got a Maverick ET-733, so monitoring the grill temp should be no problem. I sure appreciate your...

Tips on seasoning a brand new WSM 18.5?

My new WSM 18.5 will be delivered (assembled) on Friday. I told the Ace store manager to make sure it's the 2014 model with the silicone grommet for probe wires before delivering it. I got a 16 lb bag of Kingsford Blue, a Maverick ET-733, grill gloves, and some vegetable oil. What do you think...

    Can't Decide: 18.5 or 22.5 WSM

I pulled the trigger. Bought the Genesis EP-330, 2 propane tanks (filled), the WSM 18.5 and Rapid Fire Chimney Starter. They'll be assembled and delivered on Friday. Now I need to hunt down some meat! JP

    Can't Decide: 18.5 or 22.5 WSM

Thanks guys for all your suggestions. I've decided to pull the trigger on the WSM 18.5. That smoker, along with the Genesis EP-330 grill I'm gonna get, should be plenty of capacity for cooking/smoking more than enough Q for my needs. JP
