    - BBQ Bucket list

This my friends is an excellent idea, My wife and I have traveled by car over lower 48 several times and have found some real winners, usually requiring us to buy sauce or rub. I will use this list on future trips and maybe add a few. There are no greater critics than those of us who smoke meat!

    BabyBrisket

Jimmy, I have thankfully learned to nail briskets but frequently lose my brain on the sides - you choices are right on the money and copied into my recipe binder. Thanks for sharing this story.

Aluminum heat shield replacement WSM 18"

I'm at the point of replacing parts with my 18", just ordered a new thermometer, noticed the heat shield at the bottom is cracked at 2 of the three slots where it connects to the legs. $30+ for a new one on amazon, think I'll just cut 3 new slots with the Dremel...? Maybe I shoulda cleaned the...

    How about some good news?

Covid 19 POSITIVE - more time to smoke meat! Since the start - 3/8 in our area, I've smoked 1 pork shoulder and 2 briskets to be spread throughout the Jones Family breakfast lunch and dinner menus daily. Love my 18" Smoker! Also, I bought a brisket flat from my local butcher, alway avoided due...

    Have I just Committed Treason?

I got a Sous Vide cooker for my birthday...I've cooked a couple steaks and a pork tenderloin with it, finishing with a stovetop grilling pan. Ok they were perfect except NO BBQ Character at all. I'm thinking I'll give the next ones a 2-3 minute kiss on on the Genesis. I hate to fire up my WSM...

    Great Fix for Leaky Vents

This fall I finally got around to dealing with the slightly bent and leaky vents on my 18.5 smoker. I ordered the replacement kit from Weber and got 4 vents with hardware. I found installing the replacement vents to be easy and they worked great. From now on I will keep them clean and lubed...

All Natural Briquettes/Lump Charcoal (Oak/Hickory) with Cherry Wood

With my standard 18" WSM, I rarely lose bricks thru the charcoal grate. I get a few mostly burned bricks if I've been kicking the dust off at end of a smoke cycle. Not a problem.

    Bottom Vents not sealing well

Just received Weber replacement vents kit and replaced my 3 bottom vents - wonderful results - now I plan to keep them clean and lubed so they last another 10 years. Tips: you must drill out the existing rivets to remove the old ones, bit of a pain selecting the right drill bit and then the...
