    I like this idea for something stable at room temperature like oats, but I'm not sure I'd like the idea of leaving cooked pulled pork sitting out at room temperature for 6-8 hours before starting to heat it.

    I wish I was able to get smaller packers to experiment with here in central PA. Everyone I've talked to can only get 20+ pounders and they charge the same price as they do for a trimmed flat. And I just can't see spending that much $$$ when there is so much fat that is going to be wasted.

    How small is too small

    I'm smoking a 3 lb chuck roast tomorrow. I don't see any reason that a small pork shoulder would respond any differently than a larger one. Just keep in mind that your cooking time is going to be more dependent on the thickness of the meat than the weight.
