    I plan on trying this out next week. It will be my first smoked turkey. I understand that it's cooked at a higher temp, but do you guys use your water pan in the smoker? I have mine switched out for a clay pot, but have been considering using the water bowl. What do you guys do?

    thanks for all the great advice fellas. i ended up going with a metal washtub and a welding blanket. one last question, will it hurt anything to put the metal washtub on my deck, with the smoker in it? will it get too hot, or will the metal reflect the heat away from the deck?

    thanks for the tip doug. i was never too worried about my smoker not getting up all that hot, as most foods i like to cook at about 220, so it's perfect for me. but if i ever want to get it hotter, i'll try your door trick. i'm just no good with chicken yet. i can't grill it, i always burn it...
