I can ruin a good brisket with the best of 'em!

Hey all... let me try to address everyone's questions and comments as best I can. Paul, when I went to pic up the brisket it was pretty stiff. My thoughts immediately were that I had over cooked the brisket. I never thought that I needed to leave it on the smoker for a longer period. Just...

Thanks, Fellas! One thing I did notice while taking the brisket off the smoker was that it didn't bend at all when I lifted it up with some tongs from the center. It was as stiff as a board.

    First Smoke, Brisket

Hey Gerry, Thanks for posting! I, too, had brisket troubles during my last smoke. From reading all the replies, I think I may have not cooked the brisket long enough... and I didn't wrap with foil until I took it off the smoker. Let's give it another shot, shall we???

Yeah, I finally got around to trying a smoked brisket in the WSM over the weekend. It came out like shoe leather. LOL I guess it was time to put me in my place after doing all the bragging on my pork butts. I was SO excited to try the brisket, and I think I did everything right, but it was...

I was just sitting down to figure out those calculations myself, John, but you beat me to it. I did double check your numbers and found everything to be correct. LOL... that's my story and I'm sticking to it.

My apologies for not getting back sooner, fellas! I've been working some crazy hours the last two weeks and haven't had much time for posting, smoking or anything else. Thank you all for the words of encouragement! One thing is for sure, all the folks here are class acts! Lew, I wish I could...

    first smoke tomorrow morning

Hal, from what I understand, brisket is on the harder side of things to smoke. I admire you for your willingness to jump in with both feet and take on something that's more of a challenge! I would have probably done the same things you did, but, luckily, we have these good folks to help us out...

    First Smoke / Lessons learned

So, I had planned to smoke my first pork butt this past weekend on the new WSM. I ended up having to work late on Friday, so I asked my wife to swing by the store and pick up a butt for me! I explained what she needed to look for, since I didn't remember us ever buying a pork butt before...
