18.5" Weber Smokey Mountain on Sale @ Walmart

Our Walmart has the 18.5" Weber Smokey Mt on sale for $199.99, they also had the 14.5" but I did not see the price. They didn't have the 22" in the store, wish they did! YMMV

    Prime Packer Brisket

It is $2.99 in Albuquerque at Costco. It was $1.89 when they fist started selling it but has been going up every time I have visited.

Texas Monthly Top 50 Barbecue Joints in Texas

Been to Tyler's in Amarillo, first class brisket! He chops the point and puts it on Texas Toast and it is delicious. The fat is completely rendered and melts in your mouth. My son and I have skipped out of family gatherings and headed over to Tyler's for our BBQ fix (we live in New Mexico).

    Smash Burger Utensil

I use an old round bacon press that is flat on the bottom and burger paper that I got off eBay. I use my Baking Steel on my Genesis and they come out terrific!

Help....My Bark was too hard on my overnight cook

I found three! They look great, nice marbling, can't wait to smoke and make some burnt ends out of the point (mother-in-law's favorite). Grilled up two prime New York Strip steaks that were about 2 inches thick and they came out restaurant worthy! At $2.79lb have been thinking about buying a...

Help....My Bark was too hard on my overnight cook

I have had this happen with a brisket and a pork butt; even on the top rack. Salt and pepper for the brisket, some sugar in the butt rub. Fat side down, the fat is way past rendered and is the consistency of shoe leather. I use the minion method and light with about 20 briquettes. Also use...

Smashed burgers on the Genesis using the Baking Steel

I bought the quarter inch because that what they had at the time. The half inch stores more energy and recovers temps quicker than the quarter inch, thus you can cook more pizzas (though the half inch weighs 28 pounds) and patties too. You only smash the beef ball down one time. Just scrape...

Smashed burgers on the Genesis using the Baking Steel

I have the quarter inch Baking Steel, it is all they offered when I bought mine, it is quite heavy at almost 15lbs. They do now have a half inch steel that I probably would have gotten if it was available. And I understand they do now offer a Baking Griddle with a groove in it but they are...

Smashed burgers on the Genesis using the Baking Steel

No loss of juiciness, griddle is hot and the meat thin, you smash and hold for 10 seconds to get good contact and good crust. You scrape and flip but don't smash again, this locks in the juices. Hit it with a good dose of S&P, green chile and a slice of cheese and you are ready to go. The...

Smashed burgers on the Genesis using the Baking Steel

My go to burgers now a days, love the crusty patties and melted cheese! Of course, being in New Mexico, green chile is a must! This is the 1/4" Baking Steel that I use for pizza but it doubles really well on the Genesis as a griddle. I grind my own chuck roast and the patties are 2.66 ounces...

Pork and fish on the same WSM?

I smoke salmon on mine and I don't get the fish smell when cooking other meats.

    Brisket rubs?

Equal parts kosher salt and freshly cracked pepper on a packer, good enough for Franklin BBQ - good enough for me!

    WSM or horizontal barrel smoker?

I would love a stick burner, but living in New Mexico now and I am surrounded by a forest of pine but no hard wood, something to think about. In Texas, you can't walk 20 feet without running into a pecan, mesquite or oak tree. Better check the availability of smoking wood in your neck of the...
