    Reheating pulled pork

It worked out great. I had to use our biggest pot to cover all 3 bags and the pork was mostly thawed before I put it in the water for 15 minutes. With smaller amounts, I've gone straight from the freezer to the boiled water. Randy

    Reheating pulled pork

Thanks for the reply. I was worried that the greater quantity of cold meat would bring the temp of the water down too fast.

    Reheating pulled pork

I smoked two butts on Wednesday, pulled them that night, and put them in the freezer. Yesterday, I foodsavered them in 20 oz. portions. For my granddaughters birthday party tonight, I planned to reheat a few (3 at first) of the bags in boiling water. I've done this before with small...

    Wild Temperature Swings

Is there any reason not to use the lid-installed therms on the newer WSM's in the same manner as recommended for temp probes placed in the lid vent? Randy

Kevin, Thanks for the quick response. I'm more than a little unsure of myself because these are the 1st butts I've ever done. Randy D

1st Butts - how to reheat?

I smoked 2 pork butts on my WSM yesterday. They averaged about 7 1/2 pounds and took about 10 hours to cook in the 225 to 275 degree range. I pulled them last night and am having my son and his family over around 5:30 today for dinner. I had planned to reheat the pork in an electric roaster...

    The All Encompassing Beer Thread

Wow. Now I can read about good beers while I’m learning about barbecuing and grilling. I’m pretty much a novice when it comes to craft brews, but I’m starting to pick up on the characteristics that I like. At the nearby Wegman’s supermarket, you can make your own six pack to sample different...

    Keeping side dishes warm

Thanks for the replies. I think I'll cook them in a foil pan and pack them hot in a cooler just before I leave. Serving time should be within 2 hours.

    Keri's Hog-Apple Baked Beans

I posted this question over in the barbecue forum and got a couple of replies. I think I'll cook the baked beans in a foil pan and pack them hot in a cooler just before I leave. Serving time should be within 2 hours.

    Keeping side dishes warm

I'd like to make Keri's Hog-Apple Baked Beans to take to a party this weekend. The meat and beverages are provided and everybody brings a side dish. I've been able to keep meat warm for a while before serving in the past, but what would work best to keep baked beans warm if I'm not able to...

    Keri's Hog-Apple Baked Beans

I'd like to take these to a party this weekend. If I cooked them in a foil pan and covered the pan with foil, how long could I keep them warm in a cooler? A lot of other people will be bringing side dishes and I dont't know if I'll have access to electric.

    Horizontal water smoker?

At a buddy's picnic this past weekend, he had one of his coaching friends smoke up a variety of meats instead of grilling burgers and hotdogs himself as he has in the past. The smoker he used was a large horizontal type with a rectangular bottom and barrel-shaped lid. The firebox was in the...

    Chili Powder without Cumin

There are some very good suggestions posted here. I share John's dislike of cumin and usually avoid home-made taco dips, taco salads, etc. at parties and picnics and anything described as "southwestern" in restaurants because they typically have a strong taste of cumin. For years, I would not...

Help! Just put turkey in brine

I just mixed up Kerri C's apple honey brine and put a turkey in it. Stupid question: Are you supposed to dig out the metal thing that they have the legs held together with. Typically, you would leave it in while the turkey cooks and then it comes out easily. It would take some pulling to...
