    Looks great, I also make chimichurri when I do Tri-Tip. It's hard to find in Chicago, but I found a store that generally has it. I follow Chris's recipe on the site and it turns out great every time!

    Ideas for new things to smoke

    I second the tri-tip. I have made several following Chris's recipe and it is always excellent. For anyone in Chicago area, I have found that Caputo's usually has them (you may need to ask for them at the meat counter).

    Stall at 184

    Smoked a pork butt yesterday (well a small ~3.5 pound piece of a butt). Didn't hit a stall until 184. It stayed at 184 for ~2 hours (was smoking 225-250). I cranked up the smoker to about 275 and after another half hour it started to climb. Anyone ever hit a stall this high? I mostly hit...

    Hi, I would like to make pulled pork, but wanted to avoid the lengthy cook for a big shoulder/butt (and having 8-10 pounds of pulled pork). Has anyone had luck with smaller cuts or shoulder roasts? Thanks! Neal
