Buyer Beware: "Natural" turkey may be injected!

Chris, in your "official statement" is: "Butterball Turkey Tips If you have questions about anything having to do with turkey, visit the Butterball website." The Butterball site you refer to says you can brine the Butterball 8% water added turkeys. You, preceeding that, say you cannot. Are...

Buyer Beware: "Natural" turkey may be injected!

Chris, in the “Whole Turkey - Salted” recipe you say to not brine a water added turkey. You also suggest looking at the Butterball site for more brine advice. http://www.butterball.com/tips-how-tos/how-tos/brine Butterball turkeys have 8% added water. Their own brine recipe is a pretty basic...

    Buying whole tenderloins in cryovac

I've done this a number of times. The problem is the size and storage. What are you going to do with all that meat? However,I like the whole piece. I trim all the connective tissue and all the fat from the side surfaces. This leaves a much cleaner tenderloin steak sized exactly as you want than...

Smoking "ready to cook" uncooked ham

Smoking "ready to cook" uncooked ham

I have a 10lb spiral sliced shank half uncooked cured ham from the Safeway. It says it's mildly smoked. I'll bet Safeway used liquid smoke! I'd like to smoke it at 225-250F in the WSM over water for several hours and then cook at about 300-325F after the water has evaporated. I could complete...

    Bigger water pan

I have the latest model of the WSM with the larger water pan. When I’m barbecuing and have to tend the charcoal I can’t see or get to the charcoal on the side opposite the larger water pan. That’s from the door. I’ll probably buy the lower Brinkmann pan, though I can’t find one locally. Chris...

    Charcoal[s] BTUs per pound

I'm just interested in comparing BTU cost for charcoal and propane without the variables. As I'm sure you know, it's hard to compare propane with charcoal. There's more waste with charcoal. You burn up a fair amount of the charcoal while it's lighting up, and you burn up a fair amount after...

    Charcoal[s] BTUs per pound

I'm trying to find out how many BTUs a pound of different charcoal products contain. I can't find anything concrete about this on Google, at least not about the Kingsford Original that many use. A 20lb tank of propane, as I understand it contains slightly over 400,000 BTUs and here in Cal. costs...

    Sam's Choice Charcoal @ $.29/lb?

Has anyone tried Sam's Choice Charcoal Briquettes from Walmart? Its regular price in the SF Bay Area is $5.27/18lb, or $.29/lb. That's less than Walmart's regular price for Kingsford, which is about $.37/lb or so. This weekend Home Depot is selling Kingsford for $9.97 for 40lb, or $.25/lb. I...

What if I don't foil the water pan?

I've been putting a disposable foil drip pan on the bottom grate over the water pan. In addition to keeping the fat out of the water pan, it captures your drippings for making sauce. That's important when we do turkey or roast beef.

temp control with smaller characoal ring?

I'm a relatively new WSM user, though I had a bullet smoker prior. It seems a lot is directed toward maintaining a stable temp. of 250-275F. Have any tried using less charcoal with a smaller diameter charcoal ring? This would decrease the horizontal space but maintain the vertical dimension. You...

Water pan deeper in new 18.5 WSM

I've discussed this twice with Weber Customer Service. They don't seem to understand the problem. I've the same complaint. I don't see how they could do something that dim. Thanks for the advice about the Brinkmann Charcoal Pan. If anyone knows where you can purchase one in the San Francisco...
