I agree with James H and the others. Measure the temp in multiple places to make sure you are getting the right read. Jiggle it and see how the point reacts; it should feel loose. I don’t know how else to describe it.

My roast was a 3 bone roast, it was almost six pounds. I generally followed the instructions on the main page if you would like more detailed information on temps. If you watch the IT and keep the fire going, you will do great.
