    Chicken Rotisserie Shawarma

I was really pleased with the results. While I used more of a Mediterranean spice mix this time, you could easily modify the spices to go hard at a Latin profile. The oil and lemon juice marinade base could be modified any number of ways. we had a little bit of chicken left over and I ate...

    First Grill?

Ha! Yes, they were a little more done than I would have preferred but not too bad for a first try. They made mustard based bbq sauce and cooked them indirect for about an hour, then grilled to finish. They disappeared quickly. I tried to show them the basics of indirect cooking. I got a...

    First Grill?

Mission accomplished. We confirmed grill are allowed at the apartment, I got a good deal on an Auburn Blue Mastertouch at the local Ace Hardware. They cooked pork chops tonight. About 10 or 12 kids came over. Thanks everyone for the advice.

Help! Can this brisket be saved?

That looks like it worked out pretty well. Glad you stuck with it. The point looks pretty darn good from the pictures as does the middle slices of the flat.

Help! Can this brisket be saved?

I agree with James H and the others. Measure the temp in multiple places to make sure you are getting the right read. Jiggle it and see how the point reacts; it should feel loose. I don’t know how else to describe it. Plenty of people cook brisket hot and fast so don’t panic. If the temp...

First Sausage Grind - Breakfast Sausage

I got a meat grinder for Christmas and was really happy to get a chance to try it out. I gave it a go last weekend. I ran 10 pounds of pork shoulder through the grinder to try out a breakfast sausage recipe. At the end of the day, it came out pretty good. Could use a bit more seasoning...

    Christmas Standing Rib Roast

Michele, My roast was a 3 bone roast, it was almost six pounds. I generally followed the instructions on the main page if you would like more detailed information on temps. If you watch the IT and keep the fire going, you will do great. jeff
