Y'all have made me a lazy BBQ'r. I fill my charcoal ring with charcoal. I stick a fire lighter cube (any of that sort of thing will work) down along the side of the charcoal ring near the fan. Light it, put the smoker together, crank up the HeaterMeter and walk away. Come back 30 minutes...

Definitely a cool place, and they're about 90% responsible for me owning a WSM. I used to live four houses away, and when I'd come home from work and smell their cooker chugging away.....well....

In my router (an Actiontec 1000 or something like that) I can set a "static" dynamic IP address - essentially, every time it sees the MAC address of my heatermeter, it assigns it the same IP address. If you can do that, it will avoid the "stale" IP assignments that you're running into.

My last cook, I ran into this exact issue with my WSM. Bottom vents closed (except for the one with the fan), top vent "mostly" closed. Still had a couple of times where it started to get away from me, but only 20 or so degrees above my setpoint. Ended up covering the "lamp grommet" probe hole...

I used foil tape on the outside of the fan itself to cut down the possible intake volume. That got me back into the "acceptable" range when under way, but I haven't tried it from a cold start since I taped it up. (I use Jason J's method for attaching the fan to the smoker...
