    You can use 18" also that is what Arron Franklin does. He use two 18x30 inch sheets according to his book that has pictures in it also for you to go by.

    I agree you need to know about how hot your smoker is running. Something like Steven said above will get you up and running on the cheap side and works fine. I had that exact thermo for 10 years and never had a problem. Here is one I found for about 6-7 dollars...

    Water water everywhere, but not in the WSM?

    Butts and brisket I use water, chicken and ribs I don't. I double foil with an air space so clean up is just wad the top layer up and toss it.
