    Sounds like the regulator tripped and throttled the gas. Weber regulators are very touchy. It should take a full 10 seconds or so to open full, so take your time.

    A good rule of thumb for me is cooking poultry to 185. That way little chance of dying from some horrible disease.

    Pulled pork: Butt or picnic?

    There is more waste in a picnic, but the meat is generally leaner. I do like the picnic as a BBQ'd roast (not pulled) and my son and I used to "fight" over the crackling. Picnics are also usually cheaper. You can buy the NY shoulder that has both butt and picnic and have the best of both worlds.

    You will not be disappointed, or at least if you are - you're not out much. I swear by those bricks and as far as I'm concerned, it will cook/smoke/grill/bake with the best of them.
