The smoke RING has absolutely nothing to do with smoke. I can produce a beautiful smoke ring on meat in my indoor OVENand not smoke up the house.
Smoke ring is a chemical reaction and nothing more, although heating the meat in the presence of smoke can and will produce a great smoke ring.
If I understand what you want, I THINK you can call it a fire probe, but don't assign a fan/blower to it.
I don't understand the reason for wanting a "low" since it won't be losing temperature as long as there is a fire in the pit.

It really depends on your ambient temperature.
I have gone as low as 95 with my Stoker, but it was 28 degrees outside that night. I just did it to see how low I could keep the temperatures.
If it's 85 outside and the smoker is in the sun, I can get almost 200 without a fire or even a spark.

If it were me, I think that I would look towards controls for a gas OVEN instead of a turkey fryer. After all, you are asking for your pit to act just like an oven, and all of the research and design has already been done (many have UL approval!), instead of adapting a thermostatically...
How much sooty build-up is on the Maverick sensor? Carbon makes a pretty good insulater.
They could both be off, one high and the other low. I really wouldn't worry about the small stuff like that. Just cook and be happy.
