    20lb turkey? Spatchcock?

    I've got two 20lb turkeys to smoke for Thanksgiving. Everything I am reading is basically saying only do a spatchcock with a bird that size and run it at 275-300 for 11-12mins/pp. Does this sound right to this group? Still debating on which smokers to go with.. My competition offset or two WSMs...

    Thanks Justin - I am having much better luck by filling up the bottom without the grate. I am at 7hrs and have been stable at 235 pretty much throughout the cook. Thanks again!

    One last question.. do you leave the grate in under your charcoal or just fill it up all the way without the grate? I am just not getting the same burn time...

    Don't have mine (yet), but I watched a video on YouTube and how I guy used a toolbox and drilled holes in the side for the wiring to keep it dry. I'll probably end up going that route.

    Food Saver

    I just got a Food Saver for Christmas and was wondering what the best way to seal Pulled Pork is.. do you partially-freeze it first, then seal - or refrigerate first, then seal.. or just let it cool on counter and then seal? Would love some recommendations! Thanks

    Refueled only once at around 11hrs into the cook. I used Kingsford for the cook. Was extremely happy with the stability.

    Well, after 23hr and 44mins - I just pulled them off the smoker. They look and smell phenomenal! They are resting now before I pull. Thanks for your help, I actually liked not having to mop
