    Smoker Identification and value?

Brand name..? Not sure, but still can't see spending more then a hundred or two on that.

    first boston butt

I would never disagree with Kruger. But I have smoked 4 butts at a time. Most times close to 40 Lbs. And I like to cook slow, 225 to 240, and never has the cook time went over 15 to 18 hours. BUT, it isn't about cook time, it is done when it is done. I wouldn't bump up temps, or foil, just give...

Great looking meal! Need to try those taters.. My Mother has a Sunburst (sp?)Conure. Looks 99.8% the same as your bird. But I have never heard her scream! But boy, when it is time for bed...... night night........night night........night night...................

    First Time Chicken Thighs

Yep, only two ways I know of for chicken skin.. Higher heat, and leave the chicken uncovered over night in the fridge to dry out the skin a bit.

    smoking cheese

Yep, can't eat that cheese too soon. I and the wife found that out the hard way the first time I cold smoked cheese. Right off the smoker is a BAD idea. A week or more later........So good.

    New to WSM

What they said! My smoker blew smoke all over the place at first. But after 12 to 14 pork butts, and some ribs and chickens later, she doesn't leak much at all. Give it some time. The gunk will build. And that is a good thing. Also, make sure you are not burnin' too much wood.....

    Got a Situation

You could always go with some fruit wood. Apple or cherry is not as strong.I use about a 70% hickory to 30% apple for most of my smokes. But my "pork puller" likes the smell and taste. As a matter of fact, she likes the smoke smell on me better then any man sprays... (when she isn't mad at...

Cajun Bandit "sold out" items ????

Wife ordered the pimp kit for me for Christmas. The door didn't get shipped with everything else, but after some e-mails he said he would send it around the first of the year. The coal ring, is about an inch or so bigger then the ring that comes with the 22.5 I haven't counted the holes, but it...

What's is on your Weber Christmas list?

My wife has did it again! For Christmas I had a few things I have really wanted. A DigiQ DX2, and a Cajun Pimp Kit! I have never used a rotisserie before, and since it came with no instructions, I am not sure the one end is even put together right. But we will find out. Only thing about the...

What's is on your Weber Christmas list?

I see a few food savers on here. I love mine. Left over ribs, and pulled pork always hits the food saver. It is great to pull it out of the freezer when ever I need a pork fix. Would love to have a Thermapen myself. After last months gift of a new grill, I am not looking for too much Weber, or...

What's is on your Weber Christmas list?

Just wondering what people have asked to be under the tree this year. Weber related anyway... I know the wife isn't going to give me Jennifer Connelly, but I did ask for some grilling stuff. How about you?

    Water Pan liner

I don't see 24 inch foil covering a water pan for a 22.5 The pan is about (what) 20 inches? So when you push the foil down it would still be short. I personally would be more then happy to purchase pre made, form fitting foil pans.Like 12 to 20 a year.

    Over night smoke

Well, after cooking 12 butts on the 22.5 (two smokes of 4 butts and two smokes with 2 butts) I am going to do my first over nighter with out sitting up all night. Plan to hit the sack in the next hour or so. I just got them started about one hour ago and the temp seems to have settled in at 235...

    First 2 butt smoke

Yes, you are cutting it too close. Remember, you need to let them rest in foil for a bit. And the great thing is, if you get them done to to early they can set in the foil and covered for hours. And then you have time to pull when ever you want. With the guru, I would go with 225. I know many...

The point where the grill is ready for food?

Oh the waiting game... I don't know if it is right, but here is what I do. Get my coals ashed, dump in the grill, and cover. Wait to see where the temp is going to sit, and start closing vents. But never the top. Once the temp sits where I want it, on goes the food. And after doing this once or...

    Great Wife!

I just put together my new Genesis 310 My wife picked this up for me for our 16th anniversary. I have looked at this grill for a while now but to be honest with you, I couldn't see spending $700. But it does seem to like I pick up a new stainless grill every 2 to 4 years.Perfect Flame, or some...

Just two little 22.5 questions for anyone?

Aaron, Welcome. The modifications to the 18.5 will be the same to the 22.5 No difference in the cookers besides the size. The 22 will use more charcoal then the 18. Again, it is the size. But you will get the feel of it after a few cooks. Just put more charcoal on when you start. You can always...
