    Just wondering if I should trim some of the fat off or would it hurt cooking time not to trim it off?

    For those trying to decide between the 18.5 & 22.5 WSM

    Just got my 22.5 couple weeks ago first was looking at getting 18.5 but changed my mine while getting read to order changed size after measuring a slab of ribs found that they would just fit on the 18.5 so checked the 22.5 box glad I did very happy with my choice.

    First smoke update 1 used the minion method to fire up smoker 2 hickory for smoke 3 put ribs on smoker and was able to keep temp around 325 or 330 All and all I think my first smoke was agood one next smoke pork shoulder for the 4 of July so still next post everyone have a good 4 of July and...
