Yet another pork butt question

Ok one more question about pork butt. The last hour that you are cooking your pork butt do you put sauce on it? I have seen it done both ways and I was wondering what the advantages and disadvantages are. Please let me know how you do yours and why. Thanks!
 
Darrin - you may get more responses on this on the bbq forum, rather than grilling. That said, my experience is that it doesn't really get any benefit from a sauce toward the latter part of the cook. But, lots of people do different mops, so try experimenting and see what you like best.
 
I used to mop every couple of hours when I started Qing, but now I just let it go. No mop, no sauce because, frankly, it just doesn't need it. I rarely put sauce on it when I eat it.
 
What Clark said. Once I put the rub on the butt, that's the last thing I apply to it until after it's pulled.
 
I have always just sprayed with apple juice every couple hours. I've never done it another way, but they say it adds more bark.

I have tried every way I can think of cooking butts. Now my new thing is not useing butts at all instead I use shoulders leaving the skin on. We want more white meat and sams butts were not making the grade so to speak.
 
Same here. Last time I used iced tea (we didn't have apple juice in the house and I happened to be drinking iced tea at the time). It seems to have worked well. Next time I might try "gunpowder" green tea since the tea itself has a smoky flavor to it and it's one of my standard drinking teas.

The last butt I did- I marinated in a orange juice/whiskey/spices mix then applied my rub. It was delicious and really no sauce was necessary. I try not to mess with it once it's going.
