Xmas Smoke

My mother has been very sick and things had been very hectic so we had no plans for Christmas dinner. A couple of days before Christmas my mom started to stabilize and things were quieting down. We grabbed a large rib roast and I decided to fire up the smoker for Christmas dinner. We also wanted to drop off dinner for my mother and brother but still have a good sit down for ourselves later. The problem has always been that taking food to her meant our dinner was cold when we got home. WSM to the rescue.

I cut off two ribs to take to my mother's leaving me with 6 ribs for my dinner. I did a simple rub of salt, pepper, garlic powder and onion powder. About 10:00 in the morning I fired up the kettle and the WSM. By 10:30 I had them both up to temp and the meat was cooking. I only had mesquite so that was the smoke of the day. The small roast cooked for about 90 minutes at 300 degrees and the Large roast at 210 degrees for about 7 hours. Both came out perfect. I was able to drop off a nice meal for mom and spend a couple hours with her while the WSM did it's thing. Needless to say a slow rib roast done to medium rare on the smoke was excellent. Combined with a salad, twice baked potatoes and a pecan pie it all made for a perfect meal.

I'm intrigued by your apparent lid holder on your kettle. Can you share with me any information on that lid holder?

The inside of the kettle lid has a small hook to hang the lid with.

I have an old enviable red stainless Performer and an old blue master touch but both of them have holders that leave almost half the lid hanging over the grill, making working sometimes hard, or at least hot! It looks like Larry's grill has a small hook like you are mentioning, and it would be of great interest to me. Can you enlighten me with a picture or a link where I might see one? Thanks for your help on this.

T, I went out and snapped a few quick pics.

I have a 2 year old OTG and it has the hook I think you are talking about.

Its lid looks like this and hangs over the grill like you described with yours:

Thanks for the info and pics. I get it now, even though my two great grills and one smoker have no such animal! I've got to figure something out and rig something up because I like the functionality a lot more than my "half on, half off" holders. Still, I won't be fixing anything to the lid so it will have to be creative. In my case that means it will take a long time to figure! Thanks again for all the help that likely seemed so elementary to you but meant so much to me. Have a great weekend.
 
The hook in the lid works ok most of the time, except when you think it's on, let go, and the lid crashes to the ground.

No problem. Glad to help.

I never use the hook holder thing. A few years ago we bought some wood patio furniture. They sent us 2 side tables instead of the 1 we ordered by mistake. There is no room to have the second one out in the "living room area" of our patio but the second one is perfect for a prep table for my OTG in the "outdoor kitchen area". I set the lid on that all the time, even when it's screaming hot. Doesn't burn or scorch it at all.

You could always look for a cheap wood or metal table to set next to (or between) your grills and use that to set your lid(s) on when they're off the kettle...Just a thought.
 
I have a very old weber grill that has that hook so I would have to assume that they all have it. For my wsm I do as mentioned above. I went to menards and bought a white plastic fold up table that works great when I'm cooking outside. The only issue that I have is it being white and the goo from the lid makes rings on it. I solved this problem with two sheets of wide foil and a little duct tape!

Looks like everyone covered it pretty will. The 22 inch kettle came with a hook which I thought was standard on all 18 and 22 inch grills. They did make an accessory called the Slide Aside which clips on the side of the grill to hold it. I don't see it on their site anymore all though there are still some at various on line stores.

Thanks for all the hook talk, and yes Bob, that food of Larry's looks outstanding. I profess ignorance. I've owned my Weber master touch since '95, a smokey joe for about 5 years, and just bought my stainless red performer and have never seen one of those hooks. That's why it was such a surprise to me, while so common to all of you! I hopefully won't be adding a 5th weber anytime soon (I also have a coveted WSM) so I'll have to be hook-less. May all your cooking be first class and your eaters hungry!
