Hi,
I am about to buy my first WSM and was wondering what accessories would you get if you were first starting with this smoker. Assuming that I need everything, (EX: thermometer's, a Chimney Starter or anything else that would be needed.)

Hi Tom,what you mentioned, plus-Kingsford charcoal, oil pan,good spray bottle,a couple rib racks,your favorite wood(chunks not chips) applejuice,apple cider vinigar, kosher salt, Hugarian Paprika, Chili powder,Garlic powder, whole garlic cloves,whole peppercorns,brown surgar,powdered mustard,Tabasco sauce,honey,cayenne pepper,accent,cumin, a good pair of heat resistant gloves, extra long tongs, good paper towels, 2 gal. freezer bags, 1 gal. freezer bags, heavy duty aluminum foil, newspaper to light the chimney, wet/dry vacumn for ease of cleanup, Simple Green cleaner, some rags, either a covered patio or canopy, lots of beer, and a great rapport with your local butcher. Oh, least I forget, and certainly not to be overlooked- a very understanding wife( or significant other)!!!

Dave probably covered it all, but here's my specific suggestions: a Weber chimney, they hold more (~$13); a Maverick ET-73 remote dual probe thermometer (~$44) or a candy analog thermometer for around $10; a rib rack or 2, I think there is a current thread on the Brinkman or Charbroil (~$10); I like my Weber stainless 3 piece tool set (~$30); Reynolds HD foil; a cheapie spray bottle for apple juice ($2). There's lots more you can get as you go along. I've found that when I buy spices, it's cheaper to get the larger sized bottles in the long run. Glove are nice but I don't have any yet. There's all kinds of neat gadgets you CAN get, or you can just keep it simple. /infopop/emoticons/icon_smile.gif
 
I'm a new WSM user too (a total of four smokes in about 6 weeks). Here is what I had for my first smoke, what I have now, and what I am planning on getting next.

Had for first smoke:

- Weber Chimney Starter *
- Kingsford Charcoal (nice, big bags) *
- Oil Drip Catch Pan *
- Long lighter thingie
- Leather Welding Gloves *
- Long handled grilling tongs *
- Maverick Probe Thermometer (not dual temp model) (or some other therm for smoker temps) *
- Instant read thermometer for meat temps *
- 1 Gallon Gas Can converted to H20 can
- Chunk Smoke wood (Oak & Hickory) *
- Wire grate brush
- Nylon-type cleaning brush
- Newspaper (for chimney starter bottom) *
- Neoprene gloves for pulling hot pork butt
- Spray bottle for apple juice
- Meat *

Got after my first smoke:
- Heavy Duty, WIDE foil (cleaning the water pan wasn't too bad after one smoke, but it's a lot easier when it's foiled)
- Chunk Wood (Apple & Cherry & More Oak)
- Home-made thermometer holder (drilled a hole in a piece of scrap wood)
- More meat

Getting soon:
- Another Oil Drip Pan -- I like my space!
- Rib Racks (been rollin' them)
- Still more meat
- Still more varieties of woods

Still haven't used:
- Wire brush for grate cleaning. I have hand-washed my grates after smoking. A bit of elbow grease get's em very nicely clean.


As for all the "Software" -- as Alton Brown refer's to it -- find a recipe, get what you need for that. Rinse, repeat. You'll soon have amassed a collection such that you'll be hard pressed to find something called for in a recipe that you don't have.

I still have a few questions. What is the oil drip pan? Does it come with the WSM? The only other things I would need to get is a chimney and a thermometer. I was thinking of getting a remote probe (not dual temp model) and some kind of thermometer for the top, to test the temp of the grill. Any suggestions?
